Utrecht posted tips on mat cutting (just checked my e-mail). It's located right under the section "Tips for Keeping a "Green" Studio". Scroll down and you're good to go.
While it focuses on framing, I think you could use the same tactics (but altering it to the specific needs for mounting) to cut mount boards.
I wish I would've thought of using a mat cutter to do my boards earlier in the semester...it would be a skill worth investing my time of practice for sure. :/
